This is my husband’s and I go to dish almost twice (maybe even 3 times) a week. The chicken is packed with flavor and we seriously cannot get enough! It’s healthy, fast and EASY to make after a long day. I season, he grills, I chop and voilá! Dinner is served. We normally are so happy with these tacos, we do not need any side dishes. BUT, if you are wanting some ideas feel free to contact me 🙂 I have a couple dishes that take no time at all!
Ingredients:
6 chicken thighs w/ fat trimmed (chicken breasts for even healthier option)
1-1.5 tbsp cumin
3 limes
Salt and pepper to season
Siete almond tortillas (regular flour or corn tortillas if not healthy conscience)
2 jalapeños
1/2 small white onion
1 bundle cilantro
Tomatillo salsa
Recipe:
First, turn the gas grill on to medium-high heat (gas grill makes this dish quick). Then, add the juice of 2 limes to both sides of the chicken. Season both sides of trimmed thighs with cumin, salt and pepper. Add the thighs on the grill for 6-8 mins on each side (depends on thickness, may take longer). While they are cooking, finely chop the onion, jalapeños, cilantro and cut the lime into wedges. Set aside.
After 12-16 mins, take chicken off the grill to rest. Then, on a large sauté pan warm up the tortillas. While they are being heated, chop the chicken.
When tortillas are done start to assemble your tacos with chicken, onion, jalapeños, cilantro, lime, tomatillo salsa and buen provecho!
